Thajské ovoce, zelenina a bylinky
Canistel / egg fruit
Méně běžné tropické ovoce známé v Thajsku jako ละมุดเขมร, เซียนท้อ nebo ม่อนไข่. Zralý plod je žlutý, měkký a aromatický; dužnina má hustou, moučnatě-krémovou texturu připomínající vařený žloutek nebo sladký škrobový dezert. Moderní Kew přijímá jméno Lucuma campechiana, zatímco thajské úřední a univerzitní zdroje běžně používají Pouteria campechiana.
Jak ji poznat
- Fruit
- oválný až vejčitý/zaoblený plod, často se zobáčkem; nezralý zelený, při dozrávání žloutne; zralý plod je žlutý a měkký
- Consumer identity
- Thai ละมุดเขมร / เซียนท้อ / ม่อนไข่ = canistel; thajské zdroje používají Pouteria campechiana (Kunth) Baehni, moderní Kew backbone přijímá Lucuma campechiana Kunth
Jedlá část: ripe fruit pulp / zralá dužnina
Běžně se nejí: large hard seeds are not the intended food portion, latex/bark/other medicinal plant parts are outside the food profile
Jak chutná
- Ripe
- sladká až jemně sladká, aromatická dužnina; hustá, moučnatá/krémová textura přirovnávaná v thajských zdrojích k vařenému žloutku, dýni nebo batátu
- Unripe
- nedozrálý plod může být svíravý; pro běžnou čerstvou konzumaci se používá plně dozrálá měkká dužnina
Jak se jí a připravuje
Nechte sklizený vyzrálý plod dojít do žluté barvy a změknout. Omyjte, rozkrojte, odstraňte velká tvrdá semena a jezte zralou dužninu. Thajské a botanické zdroje dokládají také použití do krémových dezertů, džemů, nápojů nebo pečených/sladkých úprav.
Použití v kuchyni
- fresh ripe pulp
- custard/dessert preparations
- jam
- drinks
Sezóna a dostupnost
- Guidance
- BSRU documents canistel/ม่อนไข่ being sold throughout the year in some Thai markets, specifically citing Warorot Market in Chiang Mai. Kasetsart Agricultural Knowledge Base separately indexes cultivar-specific reporting that Rugby and Salapao canistel types can fruit year-round. For the portal this resolves consumer availability as potentially year-round in some Thai locations, not as a claim that every generic canistel tree fruits continuously nationwide.
Kde koupit
- Guidance
- BSRU documents canistel sold at Warorot Market in Chiang Mai throughout the year in several stalls and also observed at an Amphawa market. The Ministry of Agriculture provincial article describes it as more commonly sold around tourist destinations and as a gift/novelty fruit. Treat these as documented market channels, not guaranteed current stock.
Skladování
- Guidance
- A Thai UBU report says fruit harvested around 60–80% yellow can be held at room temperature about 3–5 days while it finishes ripening, then ripe fruit may be refrigerated about another 5–7 days. A Maejo/PHT experiment at 10°C and 90–95% RH shows packaging strongly changes ripening time, so those experimental 14–28-day values are NOT presented as a normal household shelf-life.
Bezpečnost
- Thai Department of Agriculture community-biodiversity research records the exact species as food and specifies eating the ripe fruit.
- No therapeutic or disease-treatment claims are made.
