Ovoce
Wood apple
มะขวิด
Makhwit / มะขวิด (Limonia acidissima) je staré tvrdoskořápkové ovoce známé v Thajsku. Zralá dužnina je tmavě hnědá až téměř černá, lepkavá, výrazně aromatická a sladkokyselá; nezralá dužnina je světlá a svíravá. Profil se týká přesně Limonia acidissima, nikoli baelu / มะตูม (Aegle marmelos).
Jak ji poznat
- Fruit
- kulatý plod přibližně 8–10 cm s velmi tvrdou šedobílou až šedohnědou skořápkou; skořápka se musí rozbít, aby se člověk dostal k dužnině
- Consumer identity
- Thai มะขวิด = Limonia acidissima L.; accepted/synonymní nomenklatura je podpořena Kew a Kasetsart biodiversity database
Jedlá část: ripe fruit pulp / zralá dužnina
Běžně se nejí: very hard shell is not eaten, seeds are not presented as the normal fresh-eating portion
Jak chutná
- Ripe
- výrazně aromatická, sladkokyselá; zralá dužnina je tmavě hnědá až černá, měkká až lepkavá
- Unripe
- světlá/bílá dužnina je svíravá
Jak se jí a připravuje
Omyjte nepoškozený plod, rozbijte velmi tvrdou skořápku a jezte zralou tmavou aromatickou dužninu. Suan Dusit uvádí čerstvou dužninu samotnou nebo ochucenou cukrem, solí či chilli-solí a také zpracování na nápoj, džem nebo ovocnou pastu.
Použití v kuchyni
- fresh ripe pulp
- fruit drink
- jam
- preserved/fruit paste
Kde se pěstuje
- Locations
- Suphan Buri, Phra Nakhon Si Ayutthaya
Kde koupit
- Guidance
- Go Ayutthaya documents wood apple at Krungsri Market in Ayutthaya. Treat it as a documented local-market channel, not proof of current daily stock. This uncommon fruit may require checking traditional/local markets in season.
Skladování
- Guidance
- An exact-species fresh-fruit study found that low-temperature storage delayed ripening and fungal colonization. In that experiment fruit at 5°C showed no visible fungal development during the 15-day observation period, while 10°C and 15°C also delayed fungal growth compared with room temperature. Use cool storage for sound whole fruit, but no universal household shelf-life is asserted.
Bezpečnost
- Use sound ripe pulp as food; the hard shell is not edible and seeds are not presented as the intended fresh-eating part.
- Suan Dusit and Kasetsart sources document ripe fruit as food and processed fruit uses.
- Medicinal claims for leaves, bark, roots or unripe fruit are excluded from consumer food guidance.
