Makhwaen / severothajské koření
Aromatické severothajské koření z plodů Zanthoxylum myriacanthum. V0.13 opravuje starší canonical mapování na Z. rhetsa: terénní a herbářový výzkum Department of Agriculture rozlišil มะแขว่น/Z. myriacanthum od มะข่วง/Z. rhetsa. Starší rozporné databázové mapování je zachováno jako auditní historie, nikoli jako současná canonical identita.
Jak ji poznat
- Market part
- fresh or dried fruit/pericarp used as an aromatic spice; seeds may be removed from dried spice material depending on processing.
- Plant and fruit cues
- DOA describes Z. myriacanthum as a thorny tree with oil-gland aromatic leaves; fruit is small, roughly round and rough-surfaced, green when developing, strongly aromatic, with seed colour progressing toward dark/black at full maturity.
- Harvest quality cue
- DOA Chiang Mai guidance warns that immature fruit dries poorly, does not develop the expected dark mature colour, shrivels or may mould, and loses aroma; mature material is selected for drying and spice use.
Jedlá část: fresh young fruit in documented local side-dish use, dried aromatic fruit/pericarp used as spice
Běžně se nejí: woody/thorny plant parts are not represented as the market spice
Jak chutná

- Chuť
- hot, pungent/spicy seasoning character; DOA describes the dried fruits as strongly aromatic and hot in flavour.
- Culinary role
- used to suppress meat odours and add characteristic aroma and spicy lift to northern Thai dishes.
Jak se jí a připravuje
